Apple Upside-Down Cake

Filling

  • 2 eggs
  • 1⁄4  cup sugar
  • 1⁄4  cup cream fraiche
  • 1⁄4  vanilla bean, split and scraped
  • 1⁄4  cup all-purpose flour

Apples

  • 1⁄4 cup sugar 
  • 1⁄4 cup water 
  • 5 apples, peeled and cut into quarters – use a mixture of varieties like Cortland, Mackintosh, and Golden Delicious

1. Preheat oven to 325°.
2. Combine sugar and water in heavy bottomed sauce pan.
3. Cook on medium heat until medium-colored caramel.
4. Pour caramel into 10 inch tart pan or pie plate.
5. Arrange apple pieces on top of caramel.
6. Bake in oven for 25 minutes.
7. Spread filling on top of apples and bake in oven for an additional 30 minutes.
8. Remove and invert onto plate.
