Empire Apple Crêpes

Empire Apple Crêpes

Serves 4



2 ½      cups AP flour, sifted

2          cups milk

8          eggs, separated

½         cup cream

¼         sugar

¼         cup melted unsalted butter

1          tsp. vanilla extract

4          Empire apples, peeled and cut into eights

2          TBS light brown sugar

1          TBS. unsalted butter

2          TBS. apple schnapps


  1. Mix the flour with the egg yolks. Add the milk, cream, sugar and melted butter.  Cover and refrigerate and allow batter o rest for one hour.
  2. Heat large sauté pan, add butter and cook apples for 10 minutes. Add brown sugar and cook until caramelized.  Deglaze with apple schnapps until evaporated. 
  3. Add enough crêpe batter to just cover apples. Cook until golden brown on bottom and flip over and cook for two more minutes. 
  4. Dust with confectionary sugar, cut into wedges and serve. (Whipped cream is nice with crêpe.)
