Napoleon of Wild Mushrooms

1 lb. assorted wild mushrooms
1 TBS. salad oil
1 tsp. fresh dill leaves
2 TBS. creme fraiche
1 TBS. butter
1 TBS. white truffle oil
½1/2 cup mushroom stock
2 TBS. minced shallots
1 tsp. fresh thyme leaves
salt and pepper
dried root vegetable chips

1. Sauté mushrooms in hot pan with oil, salt and pepper.
2. Add shallots and thyme. Cook until shallots are sweet.
3. Add cream, mushroom stock, dill and butter and cook until sauce is creamy.
4. Finish with truffle oil
5. Make layer between three vegetable chips (two layers of mushrooms).
